Kioku Kitchen
Kioku Kitchen is a new fusion restaurant at New West Station that blend flavours of Japanese, Korean, and Italian cuisines. I’ll start by saying the food here is different. If you’re looking for sushi, sashimi, and udon, you may be taken aback. Come with no expectations and you will be pleasantly surprised. I had the Ocha Zukke, which cured salmon in a broth with rice and toppings. Not a dish I would even think to eat but was surprised by the compliments of umami and savoury flavours and soft and hardy textures. My wife had their picnic sampler which included a little of everything. Uni and avocado imari, assorted oshi, and a bite of bimbap.
The owner/chef was there and kind enough to walk us through his creations. As a traditional sushi chef for over 20 years, he opened Kioku to give life to different ideas and creations. Inspired by all cuisines, he likes to include and combine flavours and textures not limited by culture.
